April 6th 2013

Times and Dates: 11 am to 6 pm (approximately)

Location: TBD : Palmyra Va



Class Description: This class is geared towards applying competition BBQ techniques to your bbq cooking including food safety, meat selection, trimming, rubs, injections, mops, sprays, sauces, meat placement, temperature, chemistry of BBQ, foiling, meat doneness, bark development, smokers, grills, ovens, wood, and fire control.

In this seven -hour class, you will work side-by-side with John to smoke and prepare the 4 KCBS types of meats. Sauces and rubs are all prepared from regular pantry ingredients.



We will cover the basic four KCBS meats and have student make boxes and have experienced bbq judges judge the boxes. Discussion will take place with judges after class .

With spring here and summer approaching, this is the time to learn how to barbecue.

This upcoming Fluvanna Parks and Rec class will not be about your average barbecue, where you might throw the steak on a fired-up grill, watch it slither while basting with a store-bought barbecue sauce. This is barbecue class “southern style” and with imagination, so the barbecue you serve is not just good, it’s wow.

John Atkins, owner of the award-winning BBQ Connection, will show you how to master the art of great southern barbecue. With some classroom time, students will learn to make rubs and sauces of their own with some kick. Then you go outside for some down-home grilling.

Atkins applies his light and tangy secret recipes to chops, ribs, ham, steak, chicken, pulled pork and even catfish.

“I like ribeyes. Smoked rib eyes are unbelievable,” said Atkins. “Unbelievable” is Atkins favorite word to describe his out-of-this-world barbecue.

Last year, Atkins won a competition for his Boston butt, injected with apple juice and brown sugar, a dry rub with herbs and spices and a good dose of barbecue sauce. Atkins prefers the vinegar-based East Carolina barbecue method, but is always creative and flexible when it comes to what his clients prefer.

He uses many items to spice things up, including pineapple, peaches, and he stuffs zucchini with cheese and breadcrumbs and grills it. One of his specialties is jalapeno peppers stuffed with cream cheese and pork and wrapped up in bacon.

The class will be held at the Community Center in Fork Union on April 14 from 10 a.m. to 4 p.m. Cost for the class is $45 per person and $65 for a couple. For more information, contact Fluvanna County Parks and Recreation at 842-3150.
